When it comes to consuming raw vegetables, most of the time it's a refreshing break from enjoying them cooked. While chopping potatoes, you might wonder if you can eat them raw. Though tempting, it's best to avoid eating these starchy vegetables raw. We consulted with Chef Emilie Berner to find out what we need to know about consuming raw potatoes and why it's not recommended.

If you consume a small amount of raw potato, it's probably not harmful (though it may not taste very good). It's best to avoid eating them raw whenever possible. Consuming raw potatoes can cause discomfort or digestive issues.

Raw potatoes contain solanine and lectins, which can both contribute to the digestive issues. "The toxin solanine, which occurs just under the skin, can make people sick," says Berner.

Store potatoes in a cool, dry place. Consider a pantry or in a paper bag.

"It is important to store potatoes in the absence of light to prevent greening. Tubers with a high concentration of solanine will taste bitter, and can be harmful if eaten in large quantities," according to the USDA website. "To be safe, it is best to not eat the green part of tubers."

You do not need to discard green potatoes. "Just peel the skins, shoots and any green color; that is where the solanines concentrate," notes the website.

Cooking potatoes not only improves their taste and texture, but also makes them safer and easier to digest. Berner says the easiest way to make sure a potato is done is making sure it is fork tender.

"The best way to ensure the potato is cooked through is to test it by taking the largest piece and seeing if a knife pierces through it," she says. It should be smooth to pierce through.
